South African Bobotie
Intro:
Bobotie is a savory traditional South African dish. I thought I would take a break from Japanese cuisine this week and try something from my land of origin. Makes a great hardy meal when paired with white or traditional South African yellow rice. (Serves 8)
Ingredients:
1 slice of white bread
1 Cup of Milk
2 lb of Ground Beef
1 Onion
1/2 Cup of Raisins (Seedless)
1/2 Cup of Blanched Almonds
1 T Apricott Jam
1 T Chutney
2 T Lemon Juice
2 t curry powder
1 t Turmeric
2 t salt
Extra Virgin Olive Oil
3 eggs
2-3 bay leaves
Directions:
I.Soak bread in half of the milk. Squeeze dry and mix with minced beef.
II.Mix in remaining ingredients except, milk, oil, eggs and bay leaves.
III. Heat oil in large pan and brown meat mixture.
IV. Place into casserole dish.
V.Beat eggs with remaining milk and pour over meat. Garnish with bay leaves and bake at 350F until set.
