Matt's Mulligatawny Soup

 

Intro:

  1. Mulligatawny Soup is a curry flavored soup popular in the UK and it’s former colonies, such as my home country of South Africa. It makes a great starter or, with the optional turkey or chicken variation, can be served as the main course. Depicted above is the turkey variation.

  2. (Serves 6)


Ingredients:

  1. 4 T Butter

  2. 1 Onion chopped

  3. 1 Large Carrot chopped

  4. 2 Celery stalks chopped

  5. 1 Apple cored, peeled and chopped

  6. 1/4 Cup Flour

  7. 5 Cups of Turkey or Chicken Broth

  8. 1 heaped teaspoon of curry powder

  9. 1/2 t Ground Nutmeg

  10. 4 Whole Cloves

  11. 1 Cup diced Tomatoes

  12. Salt and Pepper to taste

  13. (Optional 2 cups of cooked and chopped Turkey or Chicken)


Directions:

  1. I.Melt butter in a large soup pot and brown onions.

  2. II.Add the carrot, celery apple and stir in flour.

  3. III. Add broth, curry, nutmeg, cloves and tomatoes and stir.

  4. IV. Bring to boil then reduce to simmer. Cover and simmer for 1 1/2 hours stirring occasionally.

  5. V.Strain vegetables from broth and set aside. Remove cloves from the vegetables.

  6. VI. Puree vegetables in blender or food processor. Return to broth and stir.

  7. VII. For the optional Turkey or Chicken option: Add the turkey or chicken and continue to simmer for 20-30 min or until the turkey or chicken is adequately reheated / cooked.
