Mediterranean Garlic Lamb & Beans
Intro:
Lamb. (Serves 8)
Lamb Ingredients:
Garlic Butter (see last entry)
4 Rib or Loin Lamb Chops
4 Cloves of Garlic, Minced
1/2 t Dried Rosemary
Ground Pepper to Taste
Bean Ingredients:
4 1/2 cup Cooked White Beans
1 1/2 cup Diced Fresh or Canned Tomatoes, Drained
1 small Onion Finely Chopped
1/2 cup Chopped Parsley
3 Cloves of Garlic, Minced
1/2 t Dried Rosemary
Ground Pepper to Taste
Lamb Directions:
I.Place lamb in shallow dish and caot with garlic and rosemary. Refrigerate for 2 to 24 hours.
II.Cook chops under a broiler for 4 to 5 minutes each side or until done.
III. Serve with garlic and rosemary side up. Top with Garlic Herb Butter.
Bean Directions:
I.Combine all bean ingredients and spread into prepared dish. Cover and bake at 425 F until heated through, about 15 minutes.
