Mediterranean Garlic Lamb & Beans

 

Intro:

  1. Lamb. (Serves 8)


Lamb Ingredients:

  1. Garlic Butter (see last entry)

  2. 4 Rib or Loin Lamb Chops

  3. 4 Cloves of Garlic, Minced

  4. 1/2 t Dried Rosemary

  5. Ground Pepper to Taste


Bean Ingredients:

  1. 4 1/2 cup Cooked White Beans

  2. 1 1/2 cup Diced Fresh or Canned Tomatoes, Drained

  3. 1 small Onion Finely Chopped

  4. 1/2 cup Chopped Parsley

  5. 3 Cloves of Garlic, Minced

  6. 1/2 t Dried Rosemary

  7. Ground Pepper to Taste


Lamb Directions:

  1. I.Place lamb in shallow dish and caot with garlic and rosemary. Refrigerate for 2 to 24 hours.

  2. II.Cook chops under a broiler for 4 to 5 minutes each side or until done.

  3. III. Serve with garlic and rosemary side up. Top with Garlic Herb Butter.


Bean Directions:

  1. I.Combine all bean ingredients and spread into prepared dish. Cover and bake at 425 F until heated through, about 15 minutes.
